8 hard-boiled eggs cooled, peeled, and cut as desired (I like slices)
1/3 cup mayonnaise
2 tsp mustard
1 tsp lemon juice
1 pinch salt to taste
1 pinch black pepper to taste

In a large bowl, add cut hard-boiled eggs, mayonnaise, mustard, lemon juice, and salt and pepper to taste. Use a spatula to gently stir everything together.
Cover and chill egg salad for at least 1 hour (optional) then serve.
